The pork is initially cooked seperately for 24 hours at at low temperature. Once done it is so tender that you can cut it with a fork... Then a sauce is made that is a little spicy with the apple on the top. This little harmony of flavours is encased in pastry and ready to eat out of the hand in a paper bag ( like a Kiwi) or on a plate with wedges or salad
